Once you step into Transparente Nakameguro, you feel like you are in bakery heaven. The smell of various breads being baked just in the back of the store from scratch really gives this beloved bakery a fresh vibe, and that’s what attracts locals to Transparente all day long. My son and I love watching the chefs make the breads as they quickly but lovingly mix the ingredients and roll them into all sorts of breads.
Chef Mori, the owner of this bakery is a young rising star in the Japanese bakery scene. He started out as a patissier in Japan under an Italian chef. This is why while many Japanese aspiring bakers went to France to learn, Chef Mori went to Italy. He chose Italy because he wanted to test his patissier skills that he had attained in Japan. The cakes he made as trainee at a local trattoria became a big hit, and soon he was given the Chef’s hat. The Italian trattoria had a very local and friendly vibe, and this inspired him to make a bakery that had an open kitchen, where the customers can see first hand the chefs in motion.
While many bakery chefs are particular about using French flour, Mori uses the best Japanese flour produced in Hokkaido. Using Japanese flour allows him to be creative. By applying his skills and arranging to match what customers want, he can create bread that is world-standard but loved by locals.
In Italy, he also learned how to use seasonal vegetables and bring out their best taste. He realized that not many bakeries use vegetables for their breads in Japan, and started making breads with lots of vegetables on them – it’s actually heavy when you pick it up!
Many bakeries close their stores when the breads are sold out, but Transparente bakes fresh bread throughout the day, so you can enjoy their popular breads even if you go in the afternoon or early evening. I personally love their petite danish breads that they make – perfect for the ladies who want to try a little bit of many kinds! They love to create breads that the customers love, and their prices are friendly compared to other high-end bakeries in Tokyo.
Transparente also has an eat-in corner with 12 seats inside and 4 seats outside, and you can enjoy tea/coffee along with the breads of your choice! You’ll see many locals chit-chatting away munching on their favorite breads, along with businessmen having a break or lunch, in a very cozy atmosphere.
He started his first bakery in Nakameguro, but he now has 6 shops all around Tokyo. Chef Mori wanted to create a store that is stylish and modern but at the same time friendly and welcoming, and that is just what he has done.
